3. Experimental Design

3.1 Experimental Objective

Develop three flavored snack powder seasoning products (BBQ, Tomato, Cheese) using the potato carrier blend (C), optimize the carrier-to-seasoning ratio, and validate flavor stability over 30 days of accelerated storage.

3.3 Processing Protocol

The flavored snack powders were prepared using the following standardized procedure:

  1. Dry blending: Potato carrier base + seasoning powder blend in ribbon blender (200 kg batch)

Interpretation: The cheese variant has the lightest appearance (highest L), while BBQ is the darkest due to the inclusion of caramel coloring and smoke powder. Tomato shows the strongest red component (a = +12.8), as expected. All values showed <5% drift after 30 days storage at 38°C.

4.2 Coating Adhesion Rate (% Coating)

Coating adhesion measured as the percentage of applied seasoning retained on extruded corn pellet snacks (cylindrical, 12 mm × 8 mm). Snacks were tumbled in a coating drum with 8% spray oil for 120 seconds, then seasoning powder applied and tumbled for 90 seconds. Excess powder removed by gentle shaking over a 2 mm sieve.

Flavor intensity and quality assessed by a trained sensory panel (n = 8, screened for sensory acuity) using quantitative descriptive analysis (QDA) on a 15-point structured scale.

Key findings: - BBQ and Cheese flavors significantly outperformed Tomato in overall liking (p < 0.05) - Purchase intent (top-two-box: "definitely would buy" + "probably would buy") exceeded 80% for BBQ and Cheese - Tomato flavor was well-received but panelists requested "more intense tomato taste" — this was addressed in the final formula by increasing tomato powder from 12% → 14% and adding a small amount of red bell pepper powder


5. Results & Analysis

5.1 Carrier Ratio Optimization

The optimal carrier-to-seasoning ratio differed by flavor variant due to the different physical properties of the flavor ingredients:
