Scope & Objective

This technical guide provides detailed formulation, reconstitution parameters, and process optimization for instant mashed potato products manufactured using Hongji Potato Flakes. The guide covers foodservice bulk preparation, retail pack formulation, and industrial ingredient applications where reconstituted mashed potato is a component of further-processed foods (e.g., shepherds pie, potato croquettes, gnocchi, and frozen potato products).

Instant mashed potato is one of the largest volume applications for dehydrated potato flakes globally. The quality of the final product depends critically on the choice of flake specification, the reconstitution ratio, water temperature, mixing method, and post-reconstitution handling.

2. Reconstitution Principles

2.1 The Potato Flake-Water System

When Potato Flakes are mixed with water, two simultaneous processes occur:

  1. Hydration: Pre-gelatinized starch granules absorb water and swell rapidly (within 15–30 seconds)
  2. Solubilization: Soluble potato solids (low molecular weight sugars, minerals, pectin fragments) dissolve into the water phase

The goal is to achieve complete hydration without overworking the mixture (which causes cell rupture and a pasty, gluey texture).

4. Reconstitution Procedure

4.1 Standard Foodservice Procedure

Step 1 — Heat Water - Heat water to 80–85°C (do not boil — boiling water damages starch structure and causes pasty texture) - For best results, use a 50/50 mix of water and whole milk (or reconstituted milk powder)

Step 2 — Add Fat (Optional but Recommended) - Add butter, margarine, or vegetable oil: 50–80 g per 1 kg flakes - Allow fat to melt in hot water before adding flakes

Step 3 — Add Flakes - Sprinkle Potato Flakes evenly over the surface of the liquid - Do not dump in one spot

Step 4 — Hydrate (Rest) - Allow flakes to absorb water: 30–60 seconds (do not stir during this period)

Step 5 — Fold Gently - Using a wire whisk or fork, gently fold the mixture from bottom to top - 10–15 gentle strokes — do not overmix - Overmixing causes cell wall rupture → pasty, gluey consistency

Step 6 — Season - Add salt (5–8 g per kg reconstituted mash) - Add white pepper, garlic powder, or herbs as desired

Step 7 — Hold - Hold at 65–80°C for up to 1 hour (covered) - Do not hold below 60°C (risk of microbial growth) - Stir gently every 15 minutes to prevent surface drying
