Critical Quality Step — Pre-cooking Temperature Control: The pre-cooking stage at 68–72°C is precisely controlled to initiate controlled starch gelatinization. This step is essential for modifying the rheological properties of the final mash. If pre-cooking temperature exceeds 75°C, excessive gelatinization causes sticky, pasty rehydrated mash. If below 65°C, insufficient gelatinization results in a gritty texture.
